Saffron need to be cultivated in almost dried lands with very little rain. There must be cold winters and hot summers.

98 percent of Iranian saffron is cultivated in Khorasan province in north east of Iran.

According to authorities from Ministry of Agriculture, total area under cultivation was 54000 acres in 2004.
